1 lb of small pasta of of your choice i.e farfalle
8 oz of mascarpone cheese
16 oz of grape tomatoes
1 bundle of green onions
1 cup of parmesan cheese
3/4 cup of panko bread crumbs
Olive Oil Spray
Preheat oven to 400 F
Cut grape tomatoes in half lenghtwise adn spread on a foil lined cookie sheet.
Spray cookie sheet with Olive oil spray (optional sprinkle with salt/pepper to taste) Bake for 9 minutes.
Bring a large pot of lightly salted water to boil.
Add pasta and cook for 9 minutes.
Resserve a cup of pasta water. Then drain pasta.
Add Mascarpone, half of parmesan cheese and half of onions to the pasta water.
add tomotaes and salt/pepper to taste.
Pour mixture in an Olive oil sprayed casserole dish.
Top dish with remining Parmesean Cheese onion and Panko breadcrumbs.
Bake for 15 to 20 minutes until the top layer of cheese and breadcrumbs is brown.
Dessert: Berry Trifle
Chiming Belle's Homemade Lemon Cake or 2 Pound Cakes
3 Cups of heavy whipping cream
1 Cup of Powdered Sugar
2 teaspoons Vanilla Extract
2 Jars of Lemon Curd
2 lbs of Berries of your choice
Mint Leaves
Combine the cream, sugar and vanilla extract in a chilled metal bowl. Beat the ingredients together until the cream is thick and fluffy with stiff peaks.
Mix half of the cream mixture with the lemon curd.
Cut the cake into cubes
Layer a Trifle bowl with cake pieces, lemon mixture, berries, until you reach the top of the Trifle bowl.
Put the other half of the whipped cream mixture on top with mint leaves.
