Slow Cooker Irish Stew Recipe
(serves 4)

    It has been a cherished family tradition to enjoy Irish stew for dinner on St. Patrick’s Day. This hearty dish, with its tender meat, potatoes, and vegetables, perfectly captures the essence of Irish cuisine and the warmth of the occasion. I like to imagine that St. Patrick himself might have savored a similar meal during his time.

    For us, this tradition is more than food; it is a way to honor the legacy of Saint Patrick. Known for spreading Christianity across Ireland, he used symbols like the shamrock to teach faith and unity. As we gather around the table, this dish reminds us that St. Patrick’s Day is not only a celebration of Irish heritage but also a day to reflect on faith and the enduring cultural traditions.

  1. 1 bottle (11.2 oz) Guinness Beer 
  2. Enjoying Irish Stew a St. Patrick's Day Tradition! 
    2 lb. beef stew meat 
  3. 2 cloves garlic, crushed 
  4. 1 tbsp. tomato puree 
  5. 1 yellow onion, peeled and diced
  6.  4 carrots, peeled and diced 
  7. ½ leek, cleaned and diced
  8.  1 parsnip, peeled and diced 
  9. 2 sprigs of fresh thyme
  10.  1-2 bay leaves
  11.  7 Russet potatoes, peeled and quartered
  12.  ½ tsp Fresh Ground Black Pepper to Taste 
  13.  salt to taste
  14. 2 quarts beef stock 
Instructions
Place all the ingredients in the slow cooker. Pour the Guinness Beer over the vegetables. Pour the beef stock over the vegetables. Make sure covered, may need to use more or less than 2 quarts depending on how chunky your veggies are.  Cook on high for 4 hours or low for 8–9 hours, then use a spoon to break up some of the potatoes into the sauce. Remove Bay leaves. Season with salt and pepper to taste.
